Zucchini Bake

Two people have given us zucchini and I've already made bread and a quiche out of it. I looked on the Internet to see if I could find another use for it. Tonight I made the following recipe which I thought I'd share. It's a great way to use up zucchini and helps make your chicken go a little further. I do think the zucchini needs something - possibly some salt and/or pepper or possibly garlic? If you try it out and find something that gives it a little more flavor please let me know!

2 1/2 c. 1/4 inch think zucchini slices
2 c. cut up cooked chicken (I used two chicken breasts.)
1 can cream of chicken (I used cream of mushroom b/c that's what I had!)
2 tbsp. milk
1/8 ground nutmeg (didn't have this)
1 c. Bisquick baking mix
1/4 c. grated Parmesan cheese
1 egg
1 tsp. parsley flakes
1/4 c. butter, melted (I used two tbsp.)

Heat oven to 350 degrees. Arrange zucchini on bottom of baking dish. Top w/ chicken. Mix soup, milk, and nutmeg; spread over chicken. Mix baking mix, cheese, and egg until crumbly; sprinkle over soup mixture. Sprinkle with parsley; drizzle with butter. Bake until golden brown, 25 to 30 min. 4-6 servings.

Anyone else have some ideas for using up zucchini? How about tomatoes?

My favorite website is RecipeZaar. There is even a search feature which allows you to choose recipes based on ingredient (in this case, zucchini), category, occasion, etc.
