Mmmmm.....Yum!

That best describes a strawberry pie I made yesterday. Now, I'm not boasting, I just say that to tempt all of you to try the recipe Jason found on the Internet. One hundred thirty-six people rated it, and all of them gave it a 5 out of 5. The ingredients are simple and the prep is fairly easy. The results are great!

1 9 in. pie crust, baked (I used pre-made, but home-made would be even better, I'm sure!)

1 quart fresh strawberries

1 cup white sugar (I only used 3/4 c. and it was plenty sweet.)

3 tablespoons cornstarch

3/4 cup water

1. Arrange half of the strawberries on baked pastry shell. Mash remaining berries and combine with sugar in a medium saucepan. Bring to a boil over medium heat, stirring frequently.

2. Whisk together cornstarch and water. Gradually stir cornstarch mixture into boiling strawberry mixture. Reduce heat and simmer mixture until thickened, a/b 10 min., stirring frequently. Pour mixture over berries in pastry shell. Chill for several hrs. before serving.

* Add whipped cream to top of slice if desired!
